Eating better

Seems as though I have been eating out non stop for over a month now, Lunches at work and dinner several times a week. I work 12 hour shifts, Im up at 4am and don't get home till around 7pm. let me tell you Im exhausted to say the leaste. When I get home after a long day cooking is the last thing I want to do.
I've been reading up on several Mommy and Frugal blogs about cooking everything at once, say on a Sunday, or when ever you have your free time. Then refrigerating and/or freezing and you have all your meals for the week. In theory this sounds like a fantastic idea but who really has 3-4 hours at one time to cook for the entire week? I know I dont with a full time job and 2 small children, thats for sure. Still with this in mind I think all in all its a good idea, my family will eat better, it will be cheaper and less work in the long run once i get the hang of it. I've decided to start with only very simple recipies, things that are either fast and/or are comprised of 5 items or less. This will save me time, money and not to mention my sanity. I also purchased a crock pot and Im gonna break that out as well. How do you plan your meals for the week?

heres what Im going to start with.

Simple meal plan for the week.

Monday - Baked Chicken marinated in lowfat italian dressing, green beans, peaches and rolls.

Tuesday - Spaghetti and meatballs, garlic bread

Wed - Pot roast with potatoes, carrots and onions cooked in the crock pot.

Thurs - Turkey burgers, baked french fries and mandarin oranges.

Fri - Take out night.

Sat - Pigs in a blinket, corn on the cob, apple sauce and salad.

Sun - left over night.
